Prawns and spinach spaghetti
Background
On busy days I like making simple pasta dishes as they can be ready within 15 minutes. This prawns and spinach spaghetti is a good example - it ticks all the boxes: quick & easy to make, healthy, delicious and filling. It's dairy-free and can be gluten-free too if rice or corn pasta is used. Serve it with some grated Parmesan if you like!
Ingredients
- 200g spaghetti
- 1 Tbsp olive oil
- 250g cherry tomatoes
- 150g tiger prawns, shelled
- 2 garlic cloves
- 1 mild red chilli, deseeded
- 1 roasted pepper ( from jar or home-made)
- 100g baby spinach leaves
- 1 handful fresh basil leaves, chopped
- 1Tbsp good quality balsamic vinegar
Instructions
- Cook the pasta according to the pack instructions then drain. Put it back in the pan and keep warm under cover.
- Meanwhile, heat the oil a frying pan. Add tomatoes and cook for 2 minutes. Slice the roasted pepper & garlic, chop the chilli. Add these to the tomatoes together with the prawns. Stir for a couple of minutes, until the prawns are just turning pink.
- Stir in the spinach, basil, vinegar, cover and turn off the heat after 30 seconds. Let it steam for a minute or so then stir through the pasta.
- Season with salt and pepper then serve immediately.
