Background
This radish and rocket salad is incredibly easy to make - ready in just 5 minutes. It's nutty and zingy so it goes well with barbecued meat or with cold meat in sandwiches. It's best to make this salad at least 30 minutes before serving so that the flavours can infuse properly, but don't worry if you don't have the time!
Ingredients
- 2 large handfuls of washed rocket leaves
- 1 bunch of radishes
- 2 Tbsp extra virgin olive oil
- 1 tsp Dijon mustard
- juice of a small lemon
Instructions
- Scatter the rocket leaves in a serving bowl.
- Cut the ends of the radishes and slice them very thinly.
- Scatter these over the rocket.
- Whisk the dressing in a small bowl - taste and adjust to you your liking. It should be quite mustardy.
- Toss the salad with the dressing.
- Chill until needed.
