Ridge gourd curry

Background
Ridge gourd is one of the most nutritious and easily digestible vegetable. It is commonly used in South Indian cuisine and this curry tastes great with roti/ rice.
Ingredients
- 500g tender ridge gourd (skin peeled and cut into small pieces)
- 2 medium size onions chopped finely
- 2 green chillies split and cut
- 2 Tbsp oil
- ½ tsp mustard seeds
- ½ tsp cumin seeds
- 1 Tbsp full cream milk
- 1 spring curry leaves
- 1 tsp red chilli powder
- A pinch of turmeric powder
- 1 tsp coriander powder
- 1 tsp cumin powder
Instructions
- Heat oil in a pan and add mustard, cumin seeds, curry leaves and green chillies. Allow them to splutter.
- Add onions and fry them till they turn golden brown.
- Add coriander, cumin, red chilli, turmeric powder and sauté for a minute.
- Add ridge gourd , fry for a minute. Cover and cook till soft.
- Gourd releases moisture, open lid and cook till you get the desired consistency.
- Serve hot with roti or steamed rice.
