Ridge gourd curry

Background
Ridge gourd is one of the most nutritious and easily digestible vegetable. It is Β commonly used in South Indian cuisine and this curry tastes great with roti/ rice.
Ingredients
- 500g tender ridge gourd (skin peeled and cut into small pieces)
- 2 medium size onions chopped finely
- 2 green chillies split and cut
- 2 Tbsp oil
- Β½ tsp mustard seeds
- Β½ tsp cumin seeds
- 1 Tbsp full cream milk
- 1 spring curry leaves
- 1 tsp red chilli powder
- A pinch of turmeric powder
- 1 tsp coriander powder
- 1 tsp cumin powder
Instructions
- Heat oil in a pan and add mustard, cumin seeds, curry leaves and green chillies. Allow them to splutter.
- Add onions and fry them till they turn golden brown.
- Add coriander, cumin, red chilli, turmeric powder and sautΓ© for a minute.
- Add ridge gourd , fry for a minute. Cover and cook till soft.
- Gourd releases moisture, open lid and cook till you get the desired consistency.
- Serve hot with roti or steamed rice.
