Roasted garlic and spinach pasta
Background
When I have the oven or BBQ going I always roast/grill some veggies for meals ahead. Grilled peppers, garlic, onion, aubergine, potatoes can be very useful to create quick and easy dishes during the week. This roasted garlic and spinach pasta is a good example - I made it with garlic I'd barbecued at the weekend which gave a special flavour to this super easy dish, that can be made in just 10 minutes. Perfect for a quick lunch or light supper. You can use gluten-free pasta if you prefer.
Ingredients
- 100g pasta of your choice
- 1 large handful of baby spinach
- 3 cloves of roasted/grilled garlic
- 2 Tbsp crème fraîche or soured cream
- Grated zest of ½ lemon
- Salt and pepper
- Squeeze of lemon juice
- To serve: dried chilli flakes or nutmeg
Instructions
- Cook the pasta according to instructions on the packaging.
- Add the spinach to last minute then drain.
- Mix the crème fraîche with the roasted garlic flesh, add the lemon zest, salt & pepper.
- Put the pasta back into the pan and add the garlic cream. Mix well, taste and adjust the seasoning to your liking. You might want to add a squeeze of lemon juice.
- Serve warm with a pinch or two dried chilli flakes, if you want a bit of heat or a couple shavings of nutmeg.
