Background
Rocket (or aragula) is a nutty leafy green, perfect for quick salads. This rocket and tomato salad is ready in just a few minutes - an ideal side dish for pastas & pizzas, barbecued meat& fish or roast meats.
Ingredients
- 2 large handful of wild rocket leaves
- 1 handful cherry tomatoes ( ripe)
- 1 Tbsp pine nuts
- 1 Tbsp extra virgin olive oil
- ½ Tbsp rice vinegar
- 2 Tbsp grated Parmesan cheese
- Salt & pepper
Instructions
- Cut the tomatoes in half.
- Dry-fry the pine nuts.
- Scatter the rocket in a large bowl. Add the tomatoes, pine nuts, then the oil, vinegar and parmesan. Toss well. Season with salt and ground pepper to your taste.
