Sausage & Black Eyed Bean Stew

Background
This Sausage & Black Eyed Bean Stew is just right for a quick but tasty and warming supper - particularly in the winter months. Black eyed beans (also called black-eye peas) are really healthy - lots of fibre, iron & potassium - and they're fun to look at, so kids love them. Served with mashed potatoes it's the perfect comfort food!
Ingredients
- 12 fresh Chipolatas (or 6 halved standard sausages)
- 1 Red Onion
- 1 or 2 cloves of Garlic
- 1 Tbsp vegetable oil
- 400g can Black Eyed Beans
- 400g can Tomatoes
- 1 handful of basil
- 1 tsp dried oregano
Instructions
- Put a heavy-based casserole pan over a medium heat and add the oil.
- Chop the onion & garlic and soften in the oil for a couple of minutes.
- Add the sausages and cook for 5 minutes turning to brown all over. Stir in the dried oregano.
- Add the beans & tomatoes. Turn up the heat and gently stir until it bubbles. Lower the heat, cover and leave for 6-7 minutes more.
- Chop the basil and scatter over the stew.
- Serve warm.
Tips
- Other beans (or pulses) can be used as variations on this simple theme.
- If you have the time and know how, then using dry beans is even healthier. I'll try to put up a post on how to prepare them soon.
