Background
This sautéed courgette and runner beans is a super easy dish - perfect on a piece of sourdough or as on the side of grilled meat and fish. I used ready-sliced runner beans, Β but you can do this yourself with a bean slicer.
Ingredients
- 1 medium courgette
- 2 cloves of garlic
- 4 spring onions
- 150g sliced runner beans
- 1 Tbsp olive oil
- 1 Tbsp soy sauce
- 1 Tbsp rice vinegar
- 2 tsp sesame seeds
Instructions
- Thinly slice the courgette.
- Finely chop the garlic and spring onion.
- Heat the oil in a frying pan then fry the courgette and garlic for 3 minutes.
- Add the runner beans, spring onions, soy sauce, rice vinegar and sautΓ© for 3-5 minutes under cover.
- Add the sesame seeds and serve.
