Sauteed mushroom, spinach and beans

Background
These simple sautΓ©ed mushroom, spinach and beans isΒ wonderful withΒ a piece of toast on meat-free days or can be served as a side dish with grilled/fried meat such as steak. You can use other fresh herbs if you like and add some chilli to spice it up!
Ingredients
- 1 Tbsp olive oil
- ½ cup of chopped onion
- 3 cloves garlic, sliced
- 1 cup sliced mushrooms
- ¼ cup of white wine
- 1 Tbsp Dijon mustard
- 100g baby spinach
- 1 can mixed beans
- 2 Tbsp chopped oregano
- Salt and pepper
Instructions
- Heat the oil in a frying pan and sautΓ© the onion until soft and glossy. Add the mushrooms and garlic and fry until brown.
- Pour in the wine and add the mustard. Let it bubble for 1-2 minutes.
- Add the spinach, simmer for 3-4 minutes under cover. When the spinach has wilted add the drained beans.
- Warm through, sprinkle with oregano and season with salt to taste and pepper.
- Serve warm.
