Background
Sheer khurma is a vermicelli pudding prepared on Eid ul-Fitr in Afghanistan, India, Pakistan, Bangladesh and parts of central Asia. It is traditional festive breakfast and a desert for celebrations. The main ingredients used are vermicelli, whole milk, sugar, nuts and dates.
Ingredients
- 500 ml full cream milk
- 1 Tbsp clarified butter
- 2 Tbsp sugar
- 1 cup whole wheat vermicelli
- 1 Tbsp almonds
- 1 Tbsp pistachios
- 1 Tbsp chironji
- 1 Tbsp cashew nuts
- 1 Tbsp raisins
- 5 dry dates
- ΒΌ tsp cardamom powder
- Few strands of saffron
Instructions
- Soak the nuts and dates in water overnight. Remove the skin and chop the nuts and the dates.
- Roast raisins, chironji, dates and the nuts in clarified butter and set aside.
- In the same pan fry vermicelli till golden. keep aside.
- Bring milk to a boil and keep stirring on low flame until it thickens.
- Add the roasted vermicelli and cook for 2 minutes.
- Add sugar and stir.
- Add cardamom powder, saffron, roasted nuts, raisins and dates.
- Serve warm or chilled.
