Shiitake, edamame and cabbage in tomato sauce

Background
This shiitake, edamame and cabbage in tomato sauce is a healthy dish that you can use as pasta sauce, lasagna filling or vegetable stuffing. For this recipe you can use home-made or shop-bought tomato sauce. I used this tomato sauce.
Ingredients
- 1 Tbsp olive oil
- 1 pack shiitake
- 1 bunch salad onion
- 1 cup shredded dark cabbage (kale, savoy or spring greens)
- 1 cup edamame beans
- 1 Tbsp balsamic vinegar
- 1 cup tomato sauce of your choice
Instructions
- Heat the oil in a pan.
- Sauté the onion and shiitake for about 5 minutes, adding water, when needed.
- When they have softened, add the shredded cabbage and beans. Sauté for another 5 minutes, until tender.
- Add the balsamic vinegar, stir for a minute, then add the tomato sauce.
- Cook for another 5 minutes or so, until the tomato sauce has warmed through.
- Serve warm with pasta or rice. Or let it cool and use it for lasagna or stuffed courgette, squash, pepper etc.
