Background
This smoked salmon and avocado dish is ready in 10 minutes and requires no cooking. It’s perfect for Valentine’s fay, Mother’s Day, Anniversaries or a starter at a dinner party. If you don’t have food presentation rings, then you glass dessert bowls or parfait/ sundea glasses.
Ingredients
- 1 avocado
- 2 slices of oak smoked salmon
- ½ tsp Dijon mustard
- ½ lemon, zested and juiced
- 1 Tbsp chopped dill
- Pepper
- To serve: 1 handful rocket or watercress leaves
- Olive oil
Instructions
- Chop the smoked salmon into tiny pieces, then mix with the mustard, lemon zest, dill and a squeeze of lemon juice. Season with freshly ground pepper.
- Peel then dice the avocado flesh into small cubes and drizzle with lemon juice.
- Place two metal or silicon rings on a plate and add a layer of avocado first, pressing down slightly.
- Divide the smoked salmon mixture between the two rings, then top with avocado.
- Rest in the fridge for 30 minutes or until you’re ready to serve.
- Carefully remove the food rings, then arrange some dill and rocket or watercress leaves on top.
- Drizzle with some olive oil and serve.
