Sour cherry and chocolate oat cookies

Background
A healthy way to start a day is to have these sour cherry and chocolate oat cookies - they are vegan, sugar-free and fat-free, full of fiber and nutrition. Or snack on them during the day. For a gluten-free version use appropriate oats.
Ingredients
- 1 cup rolled oats
- 1 large, ripe banana
- 1 Tbsp ground linseed or chia seeds
- ½ cup chopped almonds or ground almonds
- 1 tsp Ceylon cinnamon powder
- 1 tsp vanilla extract
- ½ cup dried sour cherries
- 50g chopped dark chocolate (85% cocoa)
- ½ cup almond milk
Instructions
- In a bowl mash the banana with a fork.
- Add the remaining ingredients and combine well. If the mixture is too thick, add a drop more milk.
- Make patties between your palms and put them on a baking sheet, lined with parchment paper. Bake in a preheated oven, set to 190C, for 20 minutes.
- Alternatively, put the cookies in the air-fry and set it to bake for 15 minutes.
- Let them cool, then enjoy.
