Spelt pancakes with dates
Background
You can serve these easy spelt pancakes with dates for breakfast and brunch or you can snack on them during the day. You can add date syrup or honey to the batter - I find the dates make it sweet enough, also they don’t stick to the pan without sweeteners. Serve them with a drizzle of honey, date syrup, maple syrup and/or yogurt, custard or crème fraîche mixed with orange zest and honey.
Ingredients
- 1 ½ cups spelt flour
- 1 tsp baking powder
- 1 cup milk (can be dairy-free)
- 1 egg
- 1 tsp ground cinnamon
- ½ tsp vanilla paste or 1 tsp vanilla extract
- 4 Tbsp chopped dates
- 1 Tbsp orange zest
- Date syrup or honey (to taste)
- Maple syrup or date syrup or honey to serve
- Oil
Instructions
- Mix the flour, milk, cinnamon, baking powder and egg together. Add a small spoonful of oil.
- Add the chopped dates, vanilla and orange zest. Add a small amount some sugar, if you want. Mix everything together until smooth. You should get a thick but runny mixture. If it’s too runny though, add a bit more flour.
- Lightly grease a non-stick frying pan with a drop of oil, using a paper kitchen towel.
- Heat it over medium heat, then add about 4-5 small ladleful of batter to the pan.
- Fry them for about a minute, until the surface has almost set.
- Flip them over with a spatula and cook for another 1-2 minutes, until golden brown.
- Transfer them to a plate and keep them warm while you make more pancakes from the batter. You should get about 15 pancakes.
- Serve the pancakes warm or at room temperature with maple syrup or honey.
