Background
Pizza is very easy to make yourself. It can be more healthy too if you use spelt pizza dough. I used my bread machine to make the dough, but you can easily make it by hand too. This is a basic version - you can use just veggies or other meats such as leftover chicken, sausage, chorizo, ham etc. The dough is enough to make 1 large thick pizza or 2 medium thin pizzas.
Ingredients
- For the dough:
- 1 cup water
- 1 Tbsp melted butter or oil
- 2 Tbsp sugar
- 1 tsp salt
- 2 and ¾ cups spelt flour
- 1 tsp instant yeast
- For the toppings:
- About 4 Tbsp Pizza sauce mixed with ½ tsp oregano or marjoram
- ½ red onion, sliced
- 1 handful pitted Olives
- 1/ 2 cup sliced mushrooms
- ½ red pepper, sliced (grilled pepper is good too)
- ½ green pepper, sliced
- Chili pepper slices (optional)
- Few Pepperoni slices
- Grated mozzarella cheese, to taste
Instructions
- If you have a bread machine put all the ingredients into the tin and set the machine to the dough program. While the machine kneads, prepare your toppings.
- When the program has ended, remove the dough, then roll out on to an oiled baking pan (rectangular or circular). The rim should be thicker than the middle. Oil the top, cover it with a towel and let it rise for 15 minutes.
- If you don't have a bread machine: mix the yeast, water, sugar and salt. Add oil and mix well. Add flour and stir until a dough has formed. Place the dough in a mixing bowl with little olive oil, cover with a plate, and let it rise until doubled in size, for about 60 minutes. Turn onto a floured flat surface and knead for about 5 minutes. Make 1 or 2 balls, oil them slightly, then rest for 30 minutes in a warm place. Roll the ball(s) out into a circle or rectangular shape(s). Oil the top, cover with a towel and rest for 15 minutes.
- Preheat the oven to 200°C. If you have a pizza stone, preheat it.
- Slice all the vegetables and put them on a small plate.
- Spread the pizza sauce on top up to the rim. Arrange the toppings, covering the sauce. Finally add the cheese, evenly scattered all over the toppings.
- Put the pizza onto the pizza stone or on an appropriate pizza/baking sheet.
- Bake for about 10-15 minutes in the middle of the oven until the crust is golden and the cheese has melted. Serve with plenty of freshly ground pepper.
