Background

This zingy, spiced goat's cheese salad makes a lovely, light and easy-to-make lunch during the summer. Serve it with crusty bread or fresh drop scones.

Ingredients

150g pack of watercress and rocket salad
2 thick slices of Goat's cheese with rind
2 tsp chilli jam
4 radishes
4 spring onions
Chilli oil & balsamic vinegar

Instructions

Heat a griddle or frying pan. Brush the cheese with oil then griddle or fry them on each side for a couple of minutes until golden brown.
Slice the spring onion and radishes.
Scatter the salad leaves on two plates, then the spring onion and radish slices on the top.
Place the cheese on top of the salad and drizzle with oil and vinegar.
