Spiced goat's cheese salad

Background
This zingy, spiced goat's cheese salad makes a lovely, light and easy-to-make lunch during the summer. Serve it with crusty bread or fresh drop scones.
Ingredients
- 150g pack of watercress and rocket salad
- 2 thick slices of Goat's cheese with rind
- 2 tsp chilli jam
- 4 radishes
- 4 spring onions
- Chilli oil & balsamic vinegar
Instructions
- Heat a griddle or frying pan. Brush the cheese with oil then griddle or fry them on each side for a couple of minutes until golden brown.
- Slice the spring onion and radishes.
- Scatter the salad leaves on two plates, then the spring onion and radish slices on the top.
- Place the cheese on top of the salad and drizzle with oil and vinegar.
