Spiced tofu and veggie skewers

Background

I made these spiced tofu and veggie skewers in an air fryer, but you can use a grill or griddle pan if preferred. It only takes 10 minutes to cook, so it’s a quick and easy dish, perfect for midweek suppers. Serve them in a flatbread or wrap with  a nice sauce and some crispy salad.
