Spicy cola wings
Background
Grilled chicken wings are very popular at BBQ or summer parties - also as part of a Tex-mex meal. These Spicy cola chicken wings really do have a kick and perfect for parties as the marinating, the sauce and the rub can be made well in advance. You can even grill them ahead as they are very nice eaten cold too - so ideal for picnics and trips. If you don’t want the chicken wings to be very spice, reduce the hot pepper sauce and the cayenne pepper in the recipe.
Ingredients
- 12 free-range chicken wings (approx.)
- For the brine:
- 500ml coca-cola (not low-cal)
- 1 tbsp hot pepper sauce (like Sriracha or Encona)
- 1 onion, sliced
- 2 cloves garlic, peeled and crushed
- 1 tsp sea salt
- 1 tsp grinded black pepper
- For the rub:
- 2 tbsp olive Oil
- 1 tbsp smoked paprika
- 1 tsp cayenne pepper
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp celery salt
- 1 tsp English mustard powder
- 1 tsp ground black pepper
- 1 tsp fennel seeds
- ¼ tsp turmeric
- For the cola sauce:
- 200ml cola (not low cal)
- 3 tbsp ketchup
- 1 tbsp tomato purée
- 3 tbsp Worcestershire sauce
- 1 tsp hot pepper sauce (add extra for heat)
- 1 tsp smoked paprika
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp ground black pepper
- Lemon or lime juice
Instructions
- Mix the ingredients for the brine In a large bowl then add the chicken wings. Make sure they are well covered. Cover the bowl with clingfilm and rest in the fridge to marinate for minimum 2 hours, preferably overnight.
- Meanwhile, mix the rub and set aside.
- Take the chicken out of the marinade and pat-dry them with kitchen towel. Rub them with the olive oil.
- Pour the rub mixture into a freezer bag, then add the chicken, tie the handles and shake well until the wings are well coated with the spices. Put the bag in the fridge until you’re ready to cook.
- Put all ingredients for the cola sauce in a pan, stir, then bring to the boil. Reduce the heat, and simmer until you get a thick, smooth sauce. Pour it into a small serving bowl and set aside (when cooled down, keep it in the fridge).
- Preheat your grill or BBQ. Grill the chicken wings over medium heat until golden and charred. Be careful on the BBQ!
- Serve with the cola sauce and side dishes of your choice.
Tips
You can bake these chicken wings too - it should take about 30 minutes over 180C degrees.Categories
