Spicy Potato & Celeriac Soup
Background
Celeriac is very popular in France, but in the English-speaking world it is generally unknown, overlooked and underused. This Spicy Potato & Celeriac Soup is a good way to familiarise yourself with the flavour. It's deliciously warming, filling and easy to make, also (using a pressure cooker) it can be on the table in half an hour. For calorie counters, celeriac is brilliantly low - this recipe works out at about only 23 kCalΒ /100 gram.
