Background

This spinach with garlic and feta fits well in a meze or you can serve it in flat bread with grilled meat, veggies or kebab. For a vegan version use plant-based feta alternative.

Ingredients

1 Tbsp olive oil
2 cloves of garlic
150g spinach
½ lemon, juiced
Pinch of chilli flakes (optional)
50g feta

Instructions

Thinly slice the garlic.
Heat the oil, then gently fry the garlic for a few seconds - don’t burn it! You can add a pinch of chilli flakes for a spiced version.
Add the rinsed spinach. Stir, then add the lemon juice. Put a lid on, turn down the heat and sauté for 5 minutes or until the spinach has wilted.
Crumble the feta on top, let it melt a bit and serve.
