Stilton & walnut stuffed mushrooms

Background
Stilton and walnuts traditionally go hand-in-hand, so it’s no surprise that these Stilton & walnut stuffed mushrooms are absolutely delicious. You can serve them as a starter or a vegetarian main course (with a green salad) - I like serving it as a side dish with steak.
Ingredients
- 4 large mushrooms
- 30g walnuts
- 1 Tbsp breadcrumbs (or coarse polenta)
- 1 clove of garlic, minced
- 50g Stilton
- 1 Tbsp thyme leaves
- 1 egg, beaten
- 1 Tbsp olive oil
Instructions
- Preheat the oven to 200°C.
- Separate the stems from the caps of the mushrooms, and chop these finely. Chop the walnuts roughly.
- In a mixing bowl, mash the cheese with a fork, then add the egg & breadcrumbs. Add the walnuts, chopped mushroom stems, thyme and garlic, then combine.
- Fill the mushrooms with the stuffing.
- Grease a baking tray with a drop of oil, then place the stuffed mushroom in it.
- Season with salt and pepper, then drizzle with the oil.
- Bake for 15-20 minutes until the cheese has melted.
- Serve hot.
