Background

Stilton and walnuts traditionally go hand-in-hand, so it’s no surprise that these Stilton & walnut stuffed mushrooms are absolutely delicious. You can serve them as a starter or a vegetarian main course (with a green salad) - I like serving it as a side dish with steak.

Ingredients

4 large mushrooms
30g walnuts
1 Tbsp breadcrumbs (or coarse polenta)
1 clove of garlic, minced
50g Stilton
1 Tbsp thyme leaves
1 egg, beaten
1 Tbsp olive oil

Instructions

Preheat the oven to 200°C.
Separate the stems from the caps of the mushrooms, and chop these finely. Chop the walnuts roughly.
In a mixing bowl, mash the cheese with a fork, then add the egg & breadcrumbs. Add the walnuts, chopped mushroom stems, thyme and garlic, then combine.
Fill the mushrooms with the stuffing.
Grease a baking tray with a drop of oil, then place the stuffed mushroom in it.
Season with salt and pepper, then drizzle with the oil.
Bake for 15-20 minutes until the cheese has melted.
Serve hot.
