Background
Pilaf or pilav is a rice dish cooked in broth with mixed spices and onion. The basic dish then often gets supplemented with meat, fish, various vegetables and dried fruits. This Turkish Pilaf recipe is a typical, traditional and simple version that can be served as a side dish with grilled/fried meat and fish. It's very tasty and healthy, so perfect for vegans or on vegetarian days too!
Ingredients
- 300g short-grain brown rice
- 1 cinnamon stick
- 2 Tbsp raisins
- 750 ml water
- 2 Tbsp pine nuts
- 3 Tbsp olive oil
- 2 onions, thinly sliced
- ¼ teaspoon ground allspice
- ½ tsp ground cumin
- ½ tsp sea salt
- 2 Tbsp red wine vinegar
- A small handful of parsley, chopped
- A small handful of mint, chopped
Instructions
- Rinse the rice well, until the water is clear around the grains.
- Put the drained rice in a saucepan, add the raisins and cinnamon stick, then pour in the water. Bring to the boil, then over a low heat and under cover simmer for 45 minutes.
- Meanwhile, dry-fry the pine nuts and set aside.
- Heat the oil in a large pan, add the spices, salt and onion slices. Gently cook for about 10 minutes, until soft and golden brown.
- Transfer the cooked rice to a large serving bowl (it should be nice and fluffy), and discard the cinnamon stick. Add the fried onions, toasted pine nuts, vinegar and herbs. Toss well.
- Serve with labneh if you like.
