Vegan almond and apricot oat cookies

Background
These vegan almond and apricot oat cookies are actually quite healthy as they don’t have any added sugar or fat - yet they are sweet and moist thanks to the bananas and almonds. They are perfect for snacking during the day or for breakfast with your morning coffee.
Ingredients
- 2 ripe bananas
- 1 apple, grated
- 1 cup porridge oats (gluten-free, if needed)
- ½ cup ground almond
- ½ tsp vanilla extract
- 1 tsp cinnamon powder
- 50g dried apricots
Instructions
- Puree the bananas in a food processor or using a fork.
- Add the oats, grated apple, cinnamon, almond and vanilla. Mix well and let it rest for 10 minutes.
- Meanwhile, set the oven temperature to 180° C. Line a baking tray with parchment paper.
- Finely chop the apricots then add to the mixture and combine well.
- Form six or eight balls from the mixture, then flatten them slightly between your palms. Put the patties on the baking tray and bake in the oven for about 15-20 minutes until golden.
- Transfer the cookies to a rack and let them cool.
- Keep them in an airtight jar.
