Vegan apple and oat pancakes

Background
These vegan apple and oat pancakes are not only egg- and dairy-free but gluten/free too. If gluten is not an issue for you, you can use normal oats, and you won’t need any xanthan gum in the batter. Serve it for breakfast or brunch - I like snacking on them during the day.
Ingredients
- 1 Granny Smith apple, grated
- 3/4 cup porridge oats (gluten-free)
- ½ cup ground almond
- 1 tsp cinnamon powder
- 2 Tbsp coconut sugar
- 1 cup oat milk ( approx)
- 1 flax egg or 1 tsp egg replacer powder mixt with1 Tbsp water
- 1 tsp xanthan gum
Instructions
- First mix together the flax egg or the paste using egg replace powder. Set aside.
- Grate the apple and mix with the rest of the ingredients, adding the milk gradually, until you get a thick pancake batter. Mix in the egg paste.Set aside for 10 minutes to rest.
- You should have a thick mixture now. Add a teaspoon of oil to the batter.
- Lightly grease, then heat a heavy pancake pan. Add about five dollops of the batter to the pan, spreading them out into circular shapes.
- Cook them for a couple of minutes, then carefully flip them over and cook for another minute or so.
- Transfer the pancakes to a plate. Make another batch using up the remaining batter.
- Serve with maple syrup or apple compote on the side.
