Vegan banana bread with chestnuts

Background
This vegan banana bread with chestnuts is perfect during Veganuary (and the winter months) – it’s moist, healthy and filling. It goes well with morning coffee or afternoon tea.
Ingredients
- 2 large ripe bananas
- ⅓ cup oil
- ½ cup oat or hazelnut milk
- 1 tsp vanilla extract
- 2 cup spelt flour
- 1 cup flour
- 2 tsp baking powder
- 1 tsp cinnamon powder
- 200g vacuum packed or roasted and peeled chestnuts
- ½ cup muscovado sugar
- Icing sugar or 1 banana to serve
Instructions
- Put the chestnuts into a blender and process until you get crumbs. Transfer this into a mixing bowl.
- Puree the bananas in the blender, add the oil and vanilla. Pulse for a few seconds, then spoon this mixture into the mixing bowl. Add the other ingredients and mix well until sticky and dough-like.
- Line a bread tin with baking paper and spoon in the mixture. Bake in the middle of the oven for about 45-55 minutes until golden on the outside and an inserted skewer comes out clean.
- Cool on a wire rack, then decorate with sliced bananas, dipped in icing, or dust with icing sugar.
