Vegan black bean burger
Background
This Mexican-style vegan black bean burger is perfect for summer parties! It’s so easy to prepare and the patties can be chilled ahead or frozen for future meals. I served mine in gluten-free buns but you can serve them however you like - with salsa, toppings, condiments of your choice. Alternatively, serve the patties with baked sweet potato wedges & chilli sauce and a crispy salad on the side.
Ingredients
- 1 red onion
- 1 garlic clove, minced
- 1 tin black beans
- 1 tsp ground oregano
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp ground coriander
- 1 tbsp tomato puree
- Approx.2 tbsp chickpea flour (or ground flax seeds)
- 2 tbsp chopped coriander leaves
- 1 roasted/grilled pepper, sliced
- 1 tbsp chopped jalapeno pepper (optional)
- Salt and pepper
- Olive oil to cook
- To serve: buns, salsa, salad lettuce, gherkin, condiments
Instructions
- Drain the beans and put them a mixing bowl, then roughly mash them with a fork.
- Grate or very thinly slice the onion and add to the beans. Add the minced garlic, dried herbs, tomato puree and coriander. Season with salt and pepper, then combine with your hands until you get a sticky dough.
- Thinly slice tor chop the roasted pepper and jalapeno and add to the mixture - gently combine. Add more chickpea flour, if the mixture is not combining well.
- Divide the mixture into 4 or 6 equal portions and form patties. Put these on a plate, cover and chill until you’re ready to cook them.
- Heat a grill, griddle pan or frying pan.
- Spray or brush the patties with some oil, then cook them for 3-5 minutes on both sides until golden.
- Serve them in a bun with lettuce, salsa and condiments. Or serve them with sweet potato wedges and a salad.
