Vegan coconut oat cookies
Background
These coconut oat cookies are not only vegan (so free from dairy) but they're sugar-free, wheat-free, nut-free and fat-free too. You can make them with gluten-free oats too! They are absolutely delicious - perfect for breakfast, snacking during the day and for kids’ lunchbox. You can add nuts, seeds, dried fruits to the recipe like in this healthy coconut and oat cookies recipe.
Ingredients
- 3 ripe bananas
- 1 tsp baking powder
- 1 tsp cinnamon powder
- 3 Tbsp desiccated coconut
- Rolled oats (about 1 cup)
Instructions
- Mash the bananas with a fork or blend them with a stick blender until mushy.
- Add the baking powder, cinnamon and desiccated coconut, then combine. Add enough oats and the to create a soft dough. Let it rest until the oven warms up.
- Turn the oven on to 180°C and line a large baking tray with parchment paper.
- Make equal sized balls from the mixture and flatten these slightly between your palms.
- Put the cookies on the baking tray and bake for about 10-15 minutes until golden brown.
- Transfer them to a cooling rack.
- When cooled, store them in an airtight container.
