Background
You can serve this vegan mixed berries crumble pot with frozen or thawed fruits of the forest. Also, you can use any vegan cookies you like - rich, light, gluten-free etc. I made it with vegan sour cherry& brandy gluten-free cookies. As to the vegan cream alternative, you can use coconut, soy or oat based cream, custard and yogurt. It's a perfect dessert all year round, particularly suitable for Valentine's day, Mother's day or dinner parties.
Ingredients
- About 250g frozen fruits of the forest
- 200 ml vegan double cream alternative
- Sugar, Stevia or agave syrup (to taste)
- 8 cookies of your choice
- 2 Tbsp cherry brandy or orange liquor ( optional)
Instructions
- Put a few pieces of fruits aside for decoration.
- Crush the cookies between a tea towel and scatter half of the crumble into 4 pots. Scatter some fruits on top.
- Whip the cream, yoghurt or custard with the sugar/syrup and the brandy (if used) until light and fluffy, then spoon half of it over the fruits.
- Add more crumbles, keeping some for garnish. Top with more fruits.
- Cover the fruit layer with the remaining cream, then garnish with fruits and some cookie crumble.
- Keep in the fridge until serving.
