Vermicelli upma with mixed vegetables

Background
Vermicelli upma is one of the regular south Indian breakfast. It's very easy to prepare and it's very delicious. Fortified with vegetables, it makes a meal by itself. It is easy on the stomach, high in fiber and low in calories.
Ingredients
- 2 cups vermicelli
- 2 cups water
- 1 medium sized onion finely chopped
- 2 green chillies slit and cut
- 1 spring curry leaves
- 1 cup chopped vegetables (carrot, French beans, and fresh green peas)
- Salt to taste
- Seasoning:
- 2 Tbsp oil
- ½ tsp mustard seeds
- ½ tsp cumin seeds
Instructions
- Roast vermicelli in a pan on medium flame until it turns light brown. Keep aside.
- Chop carrot and French beans and cook them along with fresh peas till soft.
- Heat oil in a pan. Add mustard seeds and allow them to splutter.
- Add cumin seeds, curry leaves and green chillies. Sauté for a minute.
- Add chopped onion, fry till translucent.
- Add water and bring it to boil. When it starts boiling, add salt and roasted vermicelli. Mix well and cover with a lid.
- Cook till the water is absorbed. Stir in between occasionally to prevent sticking. Turn off the flame and transfer to a serving bowl. Serve hot.
