Background
This zesty grilled lamb is absolutely perfect for summer barbecues, parties or easy midweek suppers! You can use lamb chops or leg steaks and you can serve it with a simple Mediterranean style salad, roasted veggies or boiled potatoes. I've sliced the steaks and tucked these into grilled pittas with some onion and tomato slices, coriander, grilled red pepper, then drizzled some lemon juice over them. I was just divine!
Ingredients
- 1 Tbsp olive oil
- zest and juice of 1 lemon
- 2 Tbsp chopped fresh oregano leaves, or 2 tsp dried oregano
- 2 cloves of garlic, minced
- Salt & freshly ground black pepper
- 4 lamb chops or leg steaks
Instructions
- In a small bowl mix together the marinade ingredients.
- Put the lamb in a plastic bag or a shallow dish and pour the marinade over them. Make sure they are coated well. Marinate for at least one hour, longer if possible.
- Grill, griddle or barbecue the lamb for 3 to 4 minutes on each side for medium rare, longer if you like them well done.
- Let them rest for 5 minutes before serving.
