I love making pancakes at the weekend for breakfast. This time I made
Youβll need:
- Zest and juice of 1 orange
- 2 medium eggs
- 100g ground almonds
- 50g buckwheat or rice flour
- About 1 cup of almond milk
- 1 Tbsp cocoa powder
- 1tsp baking powder
- 1 tsp sunflower oil
How to make the orange and almond Β pancakes:
- Put all the ingredients into a food processor and whiz until you get a smooth batter – it should be quite thick so add the milk gradually.
- Let the batter rest for a few minutes.
- Lightly oil a pancake pan or heavy based frying pan.
- Add a few dollops of batter, allowing them to spread out into a circle, or put your silicon moulds into the pan and pour in the batter.
- When the surface of the pancakes have set and look like the moon, flip them over or push them out of the moulds and turn them over. Use a spatula to do this!
- Cook for another minute and transfer them onto a plate.
- Make more pancakes using up the all the batter.
- Serve the pancakes with maple syrup or orange marmalade and some toasted almonds if you like.
