Aubergine and samosa bhaji
Background
This Aubergine and samosa bhaji (fritter) recipe uses leftover samosas with aubergine, which gives it a very distinctive taste. If there are some leftover samosas, you can refrigerate them and use them next day for a side dish. This dish goes well even with just steamed rice.
Ingredients
- 2 Aubergines, small (cubed)
- 2 Samosas (Crumbled)
- 1 Onion (Finely chopped)
- 1 Green chilli
- ½ tsp Red chilli powder
- Salt as required
- 1½ tsp Oil
Instructions
- In a pan, heat oil on medium flame. Add the onion and fry until brown.
- Add the cubed aubergines and fry until soft.
- Add the crumbled samosa, salt and chilli powder and mix.
- Serve hot with roti or rice.
