Bitter gourd fry
Background
Did you know bitter gourd is a fruit not a vegetable. This fruit has wide range of health benefits. It is excellent source of dietary fiber and important nutrients like iron and vitamin c. This is dish is a very simple stir fry which goes well with rice and ghee. Also makes a delicious side dish for rasam.
Ingredients
- 250g tender bitter gourd
- 1 medium sized onion
- 1 tsp grated jaggery
- 1 tsp tamarind juice
- A pinch of turmeric powder
- 1 tsp chilli powder
- 2 Tbsp oil
- 1 sprig curry leaves
- ½ tsp coriander powder
- ½ tsp cumin powder
- Salt to taste
Instructions
- Wash the bitter gourd and onion thoroughly and slice them. Keep aside.
- Take a pan and add oil. Add curry leaves to the oil.
- Add the sliced bitter gourd and cover with lid. Cook for 5 min in low heat.
- After 5 min , turn the heat to medium. Add onions, turmeric, salt, and jaggery. Mix well.
- Fry for 10 min and add tamarind pulp. Cook until done.
- Add chilli, cumin and coriander powders. Mix well and fry for 5 min.
- Serve hot with plain rice or rasam rice and ghee.
