Background
Cauliflower 65 is a classic dish and a popular appetizer. While, there are several variations to this recipe usage of red chilli powder and other spices remain constant.
Ingredients
- 1 big size cauliflower cut into florets
- 1 Tbsp plain flour
- 2 Tbsp corn flour
- ½ tsp pepper crushed
- 1 tsp garam masala
- 1 tsp red chilli powder
- 1 Tbsp ginger crushed
- 1 spring curry leaves
- Salt to taste
- 3 garlic cloves finely chopped
- 3 green chilli slit and cut
- Oil for deep frying
Instructions
- In a bowl take plain flour and corn flour. Add ginger, salt, garam masala, pepper, chilli powder, curry leaves, 2 tsp oil, then add water and make a smooth batter.
- Wash thoroughly the cauliflower florets and blanch them in hot water. Add them to the batter and coat them with it.
- Now deep fry the florets covering with batter. Stir occasionally till they turn golden brown and crisp.
- Drain over kitchen towel to absorb excess oil.
- Heat oil for tempering, add green chilli, curry leaves and garlic. Sauté them for a minute.
- Add fried cauliflower florets and mix well. Serve hot.
