Coconut rice with ginger

Background
This coconut rice is the most delicious straight rice dish I've ever tried. The rice is just simply cooked with coconut cream & ginger - and that's it. It has no sugar (as many other recipes do) so it's more healthy too. It complements South-East Asian dishes superbly.
Ingredients
- 2 cups jasmine rice
- 2 cups water
- 200ml coconut cream
- 2 cm piece ginger, peeled
Instructions
- Wash the rice thoroughly with cold water, until the water runs clear.
- Put the rice with the other ingredients in a saucepan, then bring to the boil, stirring once or twice.
- When it boils, turn down the heat, put on the lid and, at low temperature, cook for another 10 minutes.
- Turn off the heat, let it rest for 10 minutes with the lid on.
- Discard the ginger before serving.
