Background
This is an excellent snack for children and adults alike. It's gluten-free and is ideal for those who are on the food combining diet. It's very simple to make - ready to eat within 15 minutes.
Ingredients
- 250g courgette
- 1 egg
- 2 Tbsp grated Parmesan cheese
- 2 Tbsp chickpea flour
- 1 Tbsp chopped basil or parsley
- Salt and pepper
- Olive oil
Instructions
- Grate courgette in a bowl and add the cheese, chickpea flour, eggs and the chopped herbs. Season with salt and pepper. Mix thoroughly
- Heat the oil in a non-stick frying pan. Using a Tbsp drop dollops of batter into the hot oil.
- Fry them on both sides for 2-3 minutes until golden and crispy.
- Transfer the fritters onto kitchen paper to soak up the oil.
- Serve it warm or cold with a dip.
Tips
You can add 1 clove of garlic (crushed) to the batter and/or a chilli finely chopped.© 2024 Copyright CookTogether
