Dairy-Free Chocolate Orange Brownie Cake
Background
This dairy-free chocolate orange brownie cake is rich, fudgy and very chocolatey, with fresh citrus flavour running through it. It’s the kind of cake that feels indulgent enough for birthdays, celebrations and dinner parties, yet so easy to make.
The combination of dark chocolate and orange works especially well here, as the candied peel adds little bursts of sweetness and texture. But you can swap the peel for chopped nuts if you prefer a more classic brownie-style cake.
For a vegan version, use flax eggs instead of regular eggs. To make it gluten-free, replace the flour with a mixture of ground almonds and rice or buckwheat flour.
This cake looks amazing when baked in decorative tins or silicone moulds -I used a heart-shaped mould, but bundt, rose or floral shapes would be suitable too.
Ingredients
- 125g dairy-free margarine
- 50g dairy-free dark chocolate, broken into pieces
- 1 tsp vanilla extract
- 100g light muscovado sugar
- 3 medium eggs, beaten
- 150g plain flour
- 50g candied orange peel
- 50g dairy-free orange chocolate, chopped
- 1 Tbsp orange liqueur (such as Cointreau, optional)
- For dusting:
- Unsweetened cocoa powder
- To decorate:
- Rose petals or edible fondant decorations
Instructions
- Preheat the oven to 180°C.
- Grease and line a cake tin, or prepare a silicone mould.
- Put the margarine, chocolate, vanilla, sugar, and a small pinch of salt into a heatproof bowl set over a pan of simmering water.Make sure the bowl doesn’t touch the water.
- Stir until melted and smooth, then remove from the heat and let it cool for about 10 minutes.
- Stir in the beaten eggs.
- Fold in the flour, followed by the candied orange peel and chocolate chunks.
- Add the orange liqueur, if using.
- Pour the batter into the prepared tin and spread evenly.
- Bake for about 25 minutes, until the top is set but the centre is still slightly fudgy.
- Leave to cool in the tin for 10 minutes, then carefully turn out onto a serving plate.
- Once completely cooled, dust with cocoa powder and decorate with rose petals or edible cake decorations if you like.
