Background
This vegan, super easy roasted pepper hummus is ready in just 5 minutes, as it’s made with store-cupboard ingredients. It’s ideal for last-minute parties, picnics, or evening snacking.
Ingredients
- 1 roasted red pepper, from jar
- 1 can chickpeas, drained
- 2 cloves of garlic
- 2 Tbsp tahini paste
- 1 Tbsp olive oil
- 1 tsp smoked paprika
- 1 lemon, juiced
- Salt and pepper
Instructions
- Rinse and drain the chickpeas. Peel the garlic. Remove the skin and any remaining seeds of the roasted pepper. Put them in a food processor and blitz for a few seconds.
- Add the lemon juice, tahini and roasted pepper. Blitz again until you get a creamy texture. Add some water if it’s too thick.
- Transfer it to a bowl.
- Season to taste, then stir in the paprika.
- Taste and adjust it to your liking.
