Easy roasted pepper hummus

Background

This vegan, super easy roasted pepper hummus is ready in just 5 minutes, as it’s made with store-cupboard ingredients. It’s ideal for last-minute parties, picnics, or evening snacking.

Ingredients

1 roasted red pepper, from jar
1 can chickpeas, drained
2 cloves of garlic
2 Tbsp tahini paste
1 Tbsp olive oil
1 tsp smoked paprika
1 lemon, juiced
Salt and pepper

Instructions

Rinse and drain the chickpeas. Peel the garlic. Remove the skin and any remaining seeds of the roasted pepper. Put them in a food processor and blitz for a few seconds.
Add the lemon juice, tahini and roasted pepper. Blitz again until you get a creamy texture. Add some water if it’s too thick.
Transfer it to a bowl.
Season to taste, then stir in the paprika.
Taste and adjust it to your liking.
