Easy vegetable briyani

Background
This is a quick and easy vegetable biryani recipe. It is a favorite of all in my family.
Ingredients
- 3 Tbsp clarified butter
- 2 bay leaf
- 2 inch cinnamon stick
- 1 star anise
- 5 cloves
- 4 cardamom
- ½ tsp pepper
- ½ tsp cumin seeds
- 1 medium onion (finely chopped)
- 1 tsp ginger - garlic paste
- 5 beans (chopped)
- ¼ cup peas
- 1 carrot (chopped)
- 1 potato (cubed)
- 1 cup curd
- ½ tsp turmeric
- 1 tsp red chilli powder
- ¼ tsp cumin powder
- 2 tsp biryani masala
- salt to taste
- 6 Tbsp coriander leaves (finely chopped)
- 20 mint leaves (finely chopped)
- 1½ cups basmati rice (soaked 30 minutes)
- 2 Tbsp saffron water
- 2 cups water
Instructions
- In a large cooker heat ghee and sauté spices.
- Add and sauté onions and ginger - garlic paste well.
- Add in the vegetables and sauté for 5-10 min.
- Turn the heat to low and add in the curd.
- Add in spice powder and salt to taste. Mix well.
- Add in coriander leaves and mint leaves.
- On top of this mixture, spread soaked basmati rice.
- Sprinkle biryani masala powder and salt.
- Add the saffron water and ghee.
- Add water and simmer for 25 minutes.
- Serve the vegetable briyani with kofta curry or raita.
