Edamame and kale stew

Background
This vegan, super healthy edamame and kale stew is ready in just 15 minutes. Serve it with rice or noodles.
Ingredients
- 1 tsp vegetable oil
- 1 onion
- 1 garlic clove
- 1 Tbsp soy sauce
- 200 ml vegetable stock
- 100g edamame beans
- 1 cup shredded kale or cavolo nero
- 1 tsp miso paste
- Juice of 1 lime
- Coriander leaves
- Sesame seeds (optional)
- Chilli flakes (optional)
Instructions
- Slice the onion and chop the garlic.
- Heat the oil in a saucepan and gently sautΓ© the onion for 5 minutes, then add the garlic and a pinch of chilli flakes (if used) and stir for a minute.
- Add the stock and soy sauce, then the beans. Bring to the boil and cook for 3 minutes.
- Add the kale and cook for another 3-5 minutes.
- Mix the miso with a large spoonful of the stew liquid, then pour it in the pan. Turn off the heat and stir in the lime juice and coriander leaves.
- Serve warm with sesames seeds scattered on top.
