Grated coconut curry

Background
Grated coconut curry is a simple recipe which I learnt from my mom. It is delicious and I love the combination of mild spices and the sweetness of coconut.
Ingredients
- 2 cups freshly grated coconut
- 1 medium sized onion finely chopped
- 1 tsp ginger-garlic paste
- 2 green chillies slit and cut
- 2 tsp coriander seeds
- 1β cinnamon stick
- 2-3 cardamom pods
- 4 cloves
- 1 tsp red chilli powder
- A pinch of turmeric powder
- 2 tsp oil
- Salt to taste
Instructions
- Heat a pan on medium flame and stir fry coriander seeds, cinnamon stick cardamom pods and cloves till you get nice aroma. Blend them in a blender to a fine powder and keep aside.
- Heat oil in the same pan, add chopped onions and green chillies. Fry till brown.
- Add ginger garlic paste and sautΓ© for a minute.
- Add grated coconut, red chilli powder, turmeric, salt and mix well.
- Add half cup of water and cover with a lid. Cook till the water evaporates.
- Add the spices powder and mix well.
- Remove from the heat and transfer to a serving bowl.
- Serve with hot rice or Indian bread.
