Grilled spiced chicken breast
Background
This Grilled Spiced Chicken Breast is made with Ras el Hanout spice mix, which adds a lovely aroma and flavour to the bland chicken. The baking part can be made in advance, so itβs perfect for dinner parties (fits in a Middle-eastern, North- African menu) or for summer barbecues. Serve with side dishes, salads of your choice.
Ingredients
- 2 chicken breast fillets
- 1 Tbsp olive oil
- 2 tsp Ras El Hanout spice mix
- To serve: juice and grated zest of 1 lemon, 1 Tbsp olive oil
Instructions
- Preheat the oven to 180°C.
- Mix the oil with the spices. Rub the chicken thoroughly with the paste.
- Put the chicken on a baking tray and cook for 15 minutes, then fry in a grill /griddle pan or on a BBQ/grill for approx. 5 minutes.
- Rest for 5 minutes, mix the lemon zest and juice with the olive oil and pour this over the chicken, then serve.
