Indian fried chicken
Background
Indian fried chicken recipe has many variations. This recipe is a pleasant result of my experimentation, mixing different ingredients recognisable to my taste buds. It turned out to be a family hit!
Ingredients
- 500g Chicken thighs boneless (Cut into medium pieces)
- 2 Onions, roughly chopped
- 2 Tomatoes, roughly chopped
- 1" Ginger, grated
- 6 Cloves garlic, grated
- 1 tsp Turmeric
- 1 tsp Coriander powder
- ½ tsp Cumin powder
- 1 tsp Chilli powder
- 1 tsp Erős Pista sauce (optional)
- Salt as required
- 1 Tbsp Spring onion greens, chopped (For garnishing)
- 3 Tbsp Oil
- 1 tsp Garam masala
- ½ tsp Soya sauce
- 1 tsp Tomato ketchup
Instructions
- In a pan, heat 1 Tbsp oil on medium heat. Fry onions, ginger, garlic and tomato until soft. Remove from fire and let it cool.
- Grind the above to a smooth paste and set aside.
- Heat 2 Tbsp oil in a deep bottomed vessel. Add the onion paste, coriander powder, cumin powder, turmeric, chilli powder, Garam masala and salt and fry for couple of minutes.
- Add 1 tsp Erős Pista, soya sauce, tomato ketchup and fry for a minute.
- Add the chicken pieces and fry until cooked and all the moisture is gone.
- Garnish with spring onion greens.
Tips
Erős Pista is a delicious hot paprika pickle from Hungary - you can substitute something similar if you like.You might also like
