Indian potatoes with aubergine

Background
Potatoes and aubergine are a great combination and can be served with any kind of bread. This recipe is very simple and easy to make.
Ingredients
- 2 Aubergines (Finely chopped)
- 2 Potatoes (Medium, boiled and cubed)
- 1 Onion (chopped)
- 1 tsp Cumin seeds
- 1 Green chilli (chopped)
- ½ tsp Turmeric
- ½ tsp Chilli powder
- ½ tsp Coriander powder
- 4 Garlic cloves
- 2 Tbsp Oil
- Salt as required
- 1 tsp Mustard seeds
Instructions
- Heat oil in a deep bottomed vessel, add the mustard seeds and let them splutter.
- Add onion and let it fry until it is brown.
- Add green chilli and aubergine and cook under lid.
- Add red chilli powder, coriander powder and the potatoes and mix thoroughly.
- Crush the garlic cloves and cumin seeds in a pestle and add it to the above mixture.
- Add the salt and mix and serve hot.
