Ingredients: 2 Aubergines (Finely chopped); 2 Potatoes (Medium, boiled and cubed); 1 Onion (chopped); 1 tsp Cumin seeds; 1 Green chilli (chopped); ½ tsp Turmeric; ½ tsp Chilli powder; ½ tsp Coriander powder; 4 Garlic cloves; 2 Tbsp Oil; Salt as required; 1 tsp Mustard seeds

Background

Potatoes and aubergine are a great combination and can be served with any kind of bread. This recipe is very simple and easy to make.

Ingredients

2 Aubergines (Finely chopped)
2 Potatoes (Medium, boiled and cubed)
1 Onion (chopped)
1 tsp Cumin seeds
1 Green chilli (chopped)
½ tsp Turmeric
½ tsp Chilli powder
½ tsp Coriander powder
4 Garlic cloves
2 Tbsp Oil
Salt as required
1 tsp Mustard seeds

Instructions

Heat oil in a deep bottomed vessel, add the mustard seeds and let them splutter.
Add onion and let it fry until it is brown.
Add green chilli and aubergine and cook under lid.
Add red chilli powder, coriander powder and the potatoes and mix thoroughly.
Crush the garlic cloves and cumin seeds in a pestle and add it to the above mixture.
Add the salt and mix and serve hot.
