Italian-style grilled aubergine

Background
When we have summer barbecues with my family I make this grilled aubergine in advance as a side dish. It's very easy to make and can be used in sandwiches or salads too.
Ingredients
- 2 large aubergines
- 2 cloves of garlic, sliced
- Chilli flakes to taste
- Pinch of oregano or mint leaves
- Couple of pinches of dried oregano or mint
- 2 Tbsp of vinegar
- Salt, to taste
Instructions
- Slice the aubergines.
- Grill, barbecue or dry-fry in a non-stick pan.
- Make the dressing by tossing the remaining ingredients.
- Layer them in a shallow serving dish and pour over the dressing.
- Marinate for two hours, resting in the fridge.
