Mint Coconut Chutney
Background
It's summer time and I have some nice herbs growing in my kitchen window. The fresh mint leaves, with coconut and a few other ingredients, makes a refreshing chutney which can be eaten with dosa or idli.
Ingredients
- ¼ Coconut, grated
- 1 cup, Mint leaves, washed
- 1 Tbsp Split black gram
- 1 Green chilli
- A pinch of tamarind pulp
- Salt as required
- ½ tsp Sugar
- ½ tsp Oil
- Seasoning:
- 1 tsp Oil
- 1 tsp Mustard seeds
- 1 Dry red chilli
Instructions
- In a pan, roast split black gram in ½ tsp oil and set it aside.
- In the same pan, fry mint and green chilli and set aside.
- Grind coconut, roasted mint leaves and green chilli, roasted black gram, tamarind pulp, sugar and salt to a smooth paste.
- Heat 1tsp oil and add the ingredients under seasoning and let them splutter.
- Add this seasoning to the smooth paste.
