Background

Paneer capsicum stir fry, a great combination of paneer (cottage cheese) and capsicum stir fried with other herbs to give the special taste. The recipe is a prominent North Indian curry that is almost a part of their everyday cooking. This is quick and easy to prepare at home and is the best go- to recipe on a busy day.

Ingredients

2 cups paneer cubes
2 medium sized capsicum diced
2 onions cut into medium sized pieces
2 Tbsp oil
¼ tsp turmeric powder
½ tsp red chilli powder
1 tsp coriander powder
½ tsp cumin powder
1 tsp garam masala
2 green chillies chopped finely
1 tsp ginger garlic paste
1 tsp dry fenugreek powder
Salt to taste

Instructions

Heat oil in a broad non-stick pan, add paneer cubes and sauté on a low flame for 2 minutes. Remove from heat and set aside.
In the same pan add ginger garlic paste and sauté for a minute. Then add onion and capsicum and mix well.
Add chopped green chillies, turmeric powder, red chilli powder, coriander powder, cumin powder, garam masala powder and salt.
Cook on a medium flame for 5 minutes, while stirring occasionally.
Finally add the paneer cubes, mix gently and cook on a medium flame for one minute.
Add dry fenugreek powder and remove from the heat.
Serve hot with flavored rice or roti.
