Background
Punjabi khadi is a very famous Punjabi dish which is fried onion fritters in sour and creamy yougurt sauce. It goes well with rice or roti.
Ingredients
- For onion fritters:
- 1 Large onion, thinly sliced
- 1 cup Gram flour
- ½ tsp Chilli powder
- ½ tsp Cumin seeds
- ¼ cup Water
- Salt as required
- Oil for deep frying
- For khadi:
- 1.Yogurt mixture:
- 1½ cup Sour yougurt
- 3 cups Water or as required
- ½ tsp Red chilli powder
- ½ tsp Turmeric
- Salt as required
- 30g Gram flour
- 2. Seasoning:
- 1 Medium onion, thinly chopped
- 1 Tbsp Chopped ginger
- 1 Tbsp Chopped garlic
- 2 Green chillies, chopped
- 2 Dry red chillies
- 1 tsp Cumin seeds
- A pinch of asafoetida
- A sprig of curry leaves
- 1 Tbsp Oil
Instructions
- Preparing the yogurt mixture: Whisk the yogurt until smooth.
- Mix all the ingredients under yogurt mixture with the whisked yogurt and set aside.
- Preparing the onion fritters: Add all the ingredients under onion fritters except for water and oil and set it aside for 30 minutes.
- The onions give out water after 30 minutes. Mix again well and add the ¼ cup water only if necessary. The batter should not be either very thick or very thin.
- Heat oil for deep frying. Drop the batter with a spoon so as to fry the fritters in the oil until golden brown on both sides.
- Set them aside.
- Making khadi: In a deep bottomed vessel, heat oil and add cumin seeds and asafoetida. Let them splutter.
- Add the chopped onions and sauté them for a couple of minutes.
- Add ginger, garlic, green chillies, dry red chillies and the curry leaves and fry for minute.
- Add the yogurt mixture and cook it for 14 minutes in medium flame taking care not to burn the bottom.
- After this lower the flame and cook until the khadi becomes thick. If it is too thick, add little water to thin it.
- Turn off the flame and add the onion fritters and let them soak for 10 minutes and then serve it.
