Ridge gourd peel chutney

Background
Ridge gourd is one of my favourite vegetables, it has a very mild and neutral taste. It's a vegetable with a lot of water content. In this recipe, the peel of ridge gourd is used to make the chutney! It goes very well with steamed rice and ghee (clarified butter).
Ingredients
- 2 Ridge gourd peels (washed)
- 2 Green chillies
- 2 Tbsp Urad dal (Black gram )
- 3 Tbsp Sesame seeds
- 1/8 Tamarind (1/8th size of lime)
- Pinch of sugar
- Salt to taste
- ½ tsp Mustard seeds
- Pinch of asafoetida
- 1 Dry red chilli
- A sprig of curry leaves
- 1 tsp Oil
- ½ tsp Oil
Instructions
- Wash the ridge gourds thoroughly and peel them. Set aside this peel.
- In a pan, roast the peel for 5min adding ½tsp oil (optional if you want to dry roast without oil) along with the green chillies.
- Set the roasted peel aside and let it cool.
- Dry roast urad dal and sesame seeds separately and set aside to cool.
- Grind together urad dal and sesame seeds to make a powder.
- To this powder add the roasted peel, tamarind, sugar and salt. Grind all of them together adding little water if required. Make a smooth paste.
- In a pan, heat oil and add mustard seeds and let them splutter.
- Add the dry red chilli and curry leaves to it and add this seasoning to the ground smooth paste.
- Serve this chutney with steamed rice.
